
21 Jan Keto Recipe: Shepherd’s Pie
Despite it seeming like it, not all my Keto favourites are desserts or snacks. In fact, those are very rare treats that I just like having in my fridge for those times I desperately want something that is sweet. However, most of what I make is savoury and fall within the breakfast, lunch and dinner categories, so I figured I would share some of those recipes too.
Today, I am sharing my recent discovery; Keto Shepherd’s Pie. This delicious meal is super simple to make, rich in flavour and I love that there’s always leftovers for lunch the next day.
Keto Shepherd’s Pie
This delicious Shepherd's pie is a homely meal that is rich in flavour, easy to make and the best part is that the leftovers taste even better the next day!
Mince Filling
- 500 grams Mince
- 250 grams Frozen Vegetables
- 1 cup Beef Stock
- 3 Tbsp Tomato Paste
- 1 tsp Rosemary
- 1 tsp Thyme
- Salt
- Pepper
- 1 Tbsp Olive Oil
Cauliflower Mash
- 700 grams Cauliflower Florets
- 2 Tbsp Salted Butter
- 1/2 cup Grated Cheese
- 1/4 cup Cream Cheese
- Salt
- Pepper
Mince Filling

Heat the olive oil in a large pan over medium-high heat.

Brown the mince.

Add the frozen veg, rosemary, thyme, salt, and pepper to the pan. Cook until the vegetables soften, stirring occasionally.

Add beef stock and tomato paste to the pan, stirring until the paste dissolves.

Reduce the heat slightly and let it continue to simmer until the sauce thickens, for about 15 minutes, before turning off the heat.
Cauliflower Mash

Place cauliflower florets in a large microwave-safe bowl.

Microwave until the cauliflower is very tender, for about 10 minutes.

Transfer the cauliflower florets to a blender. Add grated cheese, cream cheese, butter, salt, and pepper. Puree until it has a smooth consistency resembling mashed potatoes.
Construction

Use a slotted spoon to transfer the mince filling to a greased baking dish, evenly spreading it along the bottom.

Evenly spread the mashed cauliflower over the mince.

Use a fork to roughen the cauliflower surface.

Optionally, top with shredded cheddar cheese and paprika.

Bake until the peaks of the mashed cauliflower are browning, for about 30 minutes.
